ਤੜਕਾ / tarka (tuh-rd-kaa) - the base of most punjabi cooking, made slightly differently by each person who makes it to give it their own touch. it usually comprises of finely minced ginger and garlic, sautéed with finely chopped onions for a long time, until the onions are very caramelized (some folks add spices here or some later), and then adding finely chopped or puréed tomatoes and cooking on low-medium heat to really meld and bring out the flavors. this base is used for a variety of meals that raise punjabi households, like daal, sabji (cooked vegetable dishes), rajma, and so much more.
guru granth - the guru granth sahib, the compilation of sikh scripture that is the living guru of sikhs.
guru panth - the cpmmunityof sikhs that prescribe to sikhi as their ultimate truth and way of life.
sikhs are taught to give their lives to both guru granth and guru panth.
langar- a free community kitchen that is served 24 hours a day in all gurdwaras around the world. sikhs believe in feeding all as service and a duty.
bani- the words of the guru, sikh prayers
simran - meditation on the divine through repetition of the name of the divine, waheguru. the goal is to remove layers of ourselves through meditation to reveal the divine energy within.
sangat - the community that brings you closer to the divine
paath - sikh prayers
keertan - the singing of sikh scripture
kes - long, uncut hair, kept intact as reverence to the divine & acceptance of who we are
dastaar - the sikh turban, a crown worn in reverence of the divine, and defiance of the powers that told us this crown was only for royalty.
